No-bake chocolate oatmeal “haystacks” were the first cookies I ever made growing up.  Here I have put a healthy spin on the sugar-laden recipe of my youth.  

Now don’t get me wrong — there’s nothing wrong with indulging in some good old fashioned (or shall we say “un-healthified”) comfort food from time-to-time.  But I also love remaking recipes so that they are both nutritious AND delicious.  When we put some thought and consideration into our ingredients, we can create tasty treats with actual health benefits.  And who doesn’t want to give their family cookies — maybe even for brekkie — and feel good about it?!?

Yup, that's right — a green pea smoothie!!

As a kid, I loved to pick the pods from the garden and eat the little sun-warmed gems straight-up!

And green peas pack a nutritional punch, too!  They are rich in vitamins & minerals including vitamins K & C as well as disease-fighting antioxidants like coumestrol, which is believed to reduce the risk of stomach cancer.  Furthermore, one cup of peas contains approximately 8 grams of fibre and 8 grams of protein.

True story...  When I was preggers with baby #2, I had the strangest food aversions and cravings.  I could NOT stomach sparkling water (shocking for a girl who drinks it daily).  And yet I would take any break I had between patients to wolf tomato, lettuce & egg salad sandwiches.  And I didn’t think I even LIKED egg salad.

Fast forward more than a decade and I am still not a fan of egg salad.  Except for THIS egg salad! The mayonnaise-laden mixtures of my youth have been replaced with a not-so-pretty but much healthier, more satisfying and tastier version using smashed avocado.

This is a delicious, grain-free, paleo & keto version of muesli.

Muesli differs from granola in that it is a mixture of raw cereals (most often oats), dried fruit, seeds and nuts, whereas granola is baked.  Muesli is typically soaked with dairy or nondairy milk, yogurt, or fruit juice before eating to make it easier to chew and digest. It's super easy to throw a big batch together as part of meal prep and then have on-hand for a couple weeks.
