Yup, that's right — a green pea smoothie!!

As a kid, I loved to pick the pods from the garden and eat the little sun-warmed gems straight-up!

And green peas pack a nutritional punch, too!  They are rich in vitamins & minerals including vitamins K & C as well as disease-fighting antioxidants like coumestrol, which is believed to reduce the risk of stomach cancer.  Furthermore, one cup of peas contains approximately 8 grams of fibre and 8 grams of protein.

My kids found this to be a delicious pre-dinner snack — kind of like a drinkable gazpacho — but I would enjoy it anytime of the day. Note that the recipe calls for frozen peas.  However, I love to use fresh ones at peak season (plus some ice) when they’re super sweet and delicious.

For 2 servings, blend the following until smooth:

  • 2 cups ripe fresh honeydew melon

  • 1/2 to 1 cup frozen green peas, adjusted to taste

  • 1/2 cup canned organic coconut milk (I like to use full-fat), adjusted to desired consistency

  • 2 Tbsp Further Food collagen (nonvegan) or Nuzest Clean Lean Smooth Vanilla or Just Natural protein powder

  • 1/4 to 1/2 ripe or frozen avocado

  • handful of fresh mint leaves, adjusted to taste

  • squeeze of lime

  • Lakanto sugar-free monk fruit sweetener, raw honey (nonvegan), or stevia, adjusted to taste (optional)
