OK, I just love this pretty pink beetroot latte!  And trust me here -- it's an absolute winner even if you don't like beets!!  It has a mild, slightly sweet, slightly earthy flavour and is wonderfully creamy and satisfying.  Better still, it is refined sugar-free and packed with antioxidants, healthy fat and protein.

Ingredients for 2 servings:

  • 2 cups warmed or steamed unsweetened almond milk
  • 1 Tbsp coconut butter or MCT oil
  • 1 Tbsp beetroot powder
  • 2 scoops or individual packets collagen peptides (see note)*
  • optional stevia or raw honey to sweeten as desired

*Note: I used 2 packets Crushed Tonic probiotic collagen elixir.  Each packet contains 10g marine collagen, 1 billion units probiotics, and 1,000 mcg biotin.  Vegans can substitute one scoop protein powder of choice.


Put all of the ingredients in blender container and blend well.  Serve and enjoy!
