OK, I just love this pretty pink beetroot latte!  And trust me here -- it's an absolute winner even if you don't like beets!!  It has a mild, slightly sweet, slightly earthy flavour and is wonderfully creamy and satisfying.  Better still, it is refined sugar-free and packed with antioxidants, healthy fat and protein.

Ingredients for 2 servings:

  • 2 cups warmed or steamed unsweetened almond milk (I like to use my Almond Cow to make homemade plant-based milk)

  • 1 Tbsp coconut butter or MCT oil

  • 1 Tbsp beetroot powder

  • 2 Tbsp Further Food collagen (omit for vegan)

  • Lakanto monkfruit sweetener, pure stevia, or raw honey (nonvegan), adjusted to taste


Put all of the ingredients in blender container and blend well.  Serve and enjoy!
