Berries and tahini blend beautifully to make this simple and protein + healthy fat + fibre + antioxidant-rich breakfast of champions!

Tahini paste is made by grinding sesame seeds.  The unhulled paste is more nutrient-rich since it is made from intact seeds.  Tahini is loaded with vitamins and minerals including calcium, magnesium, copper, zinc and iron.  It is easy to digest; a great source of protein and healthy fat; and rich in anticancer, heart-healthy plant lignans as well as methionine, which helps with liver detoxification.

For 2 servings, blend together until smooth:

  • 1.5 cups frozen berries (I used a combination of blueberries and blackberries)

  • 1.5 cups unsweetened coconut water

  • 2 to 3 Tbsp unhulled tahini*

  • 2 scoops collagen peptides or natural or vanilla protein powder of choice

  • pure stevia, maple syrup, or raw honey (nonvegan) to sweeten as desired

  • optional toppings: sesame seeds and raw cacao nibs

Sprinkle with sesame seeds and raw cacao nibs as desired & serve.

*Notes: Tahini has a very distinctive flavour.  Start with 2 Tbsp and adjust to taste.  Alternatively, you can substitute your nut or seed butter of choice.
