Yum.  My family just loves this pretty pink drink.  Watermelon and strawberries get a beautiful splash of citrus from the lime and baobab powder.  Chia seeds provide a mild nutty taste along with a bonus dose of fibre, minerals, protein, antioxidants, and essential omega fatty acids. 

Baobab powder has a wonderful tangy, citrusy flavour.  It is unusually rich in fibre, vitamin C, and antioxidants.  Baobab is also packed with minerals including potassium, magnesium and calcium, making it a great addition to any post-workout snack. 

Potential benefits of baobab consumption include improved skin (anti-aging), gut and immune health.  It is also believed to promote fat burning and liver detoxification. 

For 2 servings, blend together until smooth:

  • 2 cups diced seedless red watermelon
  • 1 cup fresh strawberries
  • 1/2 cup unsweetened coconut water
  • 2 Tbsp chia seeds
  • 1 to 2 Tbsp baobab powder* 
  • juice from 1/2 to 1 lime*
  • pure stevia, maple syrup, or raw honey (nonvegan) to sweeten as desired

*Note: adjust lime and baobab powder to desired tanginess
