Because sometimes all you need is one big cookie — am I right or am I right?!?

Bonus is, my nutritious-and-delicious recipe is low in sugar and packed with fibre, healthy fats, and over 22 grams of plant-based protein.  It’s healthy enough that I’ve even been known to eat one for breakfast!

Note: This recipe is suitable for vegan, gluten-free, paleo, and keto diets. Each cookie contains approximately 22 grams of protein and 400 calories (including the butterscotch chips and diced pecans), or divide into 2 servings with 11 grams of protein and 200 calories each.

Ingredients:

  • 1/4 cup almond flour

  • 2 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder

  • 1/2 tsp paleo-friendly baking powder

  • pinch of salt

  • 1 Tbsp pecan butter (or nut butter of choice)

  • 2 Tbsp Lakanto sugar-free maple syrup (or pure maple syrup)

  • 1/4 tsp pure vanilla extract

  • 1 heaping Tbsp sugar-free butterscotch chips, divided (optional)

  • 1 Tbsp diced pecans (optional)

Directions:

  1. Preheat oven to 350F and line a baking sheet with parchment.

  2. In a small bowl, mix together almond flour, protein powder, baking powder, and salt.  Add pecan butter, maple sweetener, and vanilla extract and stir until well incorporated.

  3. Fold in chips and pecans, reserving a few for the top, and shape into one large cookie.

  4. Place on the prepared baking sheet and press into desired shape. Top with remaining nuts and butterscotch chips and bake for 8 to 12 min. Devour!
