SALTED CARAMEL OVERNIGHT CAULIFLOWER OATS

My Salted Caramel Overnight Cauliflower Oats make you feel like you’re having dessert for breakfast — only they’re healthy and nourishing, too!

Fortunately, as per my usual morning meal mantra, this tasty brekkie is packed with all the goods to start your day off right — vitamins, minerals, antioxidants, healthy fats, protein, fibre, and even veggies!

Tip: Overnight oats will keep in the fridge for several days, so I usually make 2 or 3 servings at a time.

Ingredients per serving:

  • 1/3 cup old-fashioned rolled oats, gluten-free if needed

  • 1 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder

  • 1 Tbsp Further Food vanilla collagen peptides (omit for vegan)

  • 1 tsp chia seeds

  • 1/2 tsp maca (optional)

  • 1/2 tsp FreshCap Mushrooms lion’s mane powder (optional)

  • 1/8 tsp salt

  • 1/2 cup Nutpods dairy-free caramel creamer or canned coconut milk

  • 1/4 to 1/3 cup frozen cauliflower rice (optional; steamed-then-frozen if needed for better digestion)

  • 1 Tbsp cashew butter

  • 1 Tbsp Lakanto sugar-free Maple Syrup or sweetener of choice, adjusted to taste

  • 1/2 tsp pure vanilla extract

  • optional toppings: berries, granola, Eaton Hemp hemp hearts, sugar-free butterscotch chips, almond butter, or toppings of choice

Directions:

  1. Put oats, protein powder, collagen peptides, chia seeds, maca, lion’s mane, and salt in a bowl or divide between single-serving mason jars. Stir well to combine.

  2. Add creamer or milk, cauliflower rice, cashew butter, sweetener, and vanilla and mix well.  Adjust sweetener to taste.

  3. Cover and refrigerate overnight, or for a minimum of 6 hours.

Salted Caramel Overnight Cauliflower Oats can be stored in an airtight container in the fridge for 3 to 4 days.  Before serving, stir and add additional almond or nut-free milk as needed for desired consistency.  Enjoy cold or heated with your choice of toppings.
