HOT CHOCOLATE CHIA (and Peanut Butter Hot Chocolate version)

This easy-to-make low-carb chia pudding has been a huge hit with all of my taste testers, kids and grown-up kids alike!  It’s nutritious-and-delicious and packed with antioxidants, fibre, healthy fats, and protein.  Enjoy it for breakfast, snack time, or dessert!

The surprise ingredient in this recipe is cottage cheese.  And no, you can’t taste it.  It gets blended with the creamer so you can’t even tell that it’s there.  Yet it adds a wonderful creaminess along with loads of nutrients (B vitamins, calcium, phosphorus, selenium) and 14 grams of protein per serving.

Ingredients for 4 servings:

  • 1 cup Nutpods dairy-free chocolate creamer or light coconut milk or milk of choice (see note below*)

  • 2 cups plain cottage cheese 

  • 1/2 cup Lakanto sugar-free Drinking Chocolate (or other hot chocolate mix of choice)

  • Lakanto sugar-free monk fruit sweetener, adjusted to taste (optional, will depend on how sweet your hot chocolate mix is)

  • 1 tsp pure vanilla extract (optional)

  • pinch of salt (optional)

  • 1/2 cup chia seeds 

  • optional toppings: fresh or dried berries or warm berry compote (warmed-from-frozen berries), diced Lakanto sugar-free Chocolate Peanut Butter Cups or Keto Crunchy Cookies, Rawcology coconut chips, sugar-free chocolate chips, Lakanto Suntella sugar-free chocolate sunflower spread or nut butter, granola, mini marshmallows, or toppings of choice 

*Note: Not all chia seeds “work” the same and not everyone likes the same consistency of pudding. For an extra thick and creamy chia pudding, I sometimes start with 3/4 cup milk or creamer. If after a few hours, it seems too thick, I’ll adjust the consistency by adding additional milk. If you prefer a thinner pudding, start with 1 to 1 1/4 cups.

Directions:

  1. Put creamer or milk, cottage cheese, Lakanto Drinking Chocolate powder, vanilla and salt into a blender container and blend well.  Add additional hot chocolate mix or sweetener as needed for desired taste.

  2. Add chia seeds and pulse-blend just to combine.

  3. Pour into a bowl or single serving mason jars and whisk or cover and shake.  Allow to sit for 10 minutes, then whisk or cover and shake again.  Cover and refrigerate overnight.

In the morning, stir and add sweetener and/or milk as needed for desired taste and consistency.  Serve cold or heated-up with your choice of toppings.

PEANUT BUTTER HOT CHOCOLATE CHIA VERSION: Add 1/4 cup peanut butter and blend with other ingredients before adding the chia seeds.
