Even in the cooler months, I love a refreshing smoothie after a hardcore workout.  With beets, cauliflower, watermelon, coconut water, and collagen/protein, this is one awesome recovery drink!  And the kefir will help to keep your gut happy, too!

This post requires a big shout-out to @foodgoalsto for the frozen watermelon tip!!  It’s soooo good in this hydrating probiotic smoothie!

Watermelon is 92% water and contains only 46 calories per cup.  However, it is packed with vitamins like C and A, as well as disease-fighting phytonutrients including the carotenoid antioxidant lycopene.  In addition to giving watermelon its beautiful red colour, lycopene is believed to help reduce cholesterol and blood pressure as well as the the risk of cancer, stroke, diabetes, and even osteoporosis!

For 2 servings, blend together until smooth:

  • 2 cups frozen watermelon chunks
  • 1 cup frozen cauliflower florets
  • 1 cup purple beets (steamed, peeled, diced and chilled)
  • 1 cup coconut kefir*
  • 1 cup unsweetened coconut water
  • 1 scoop natural protein powder*
  • 1 packet collagen peptides (omit for vegan)*
  • 2 Tbsp white chia seeds
  • raw honey (nonvegan) or stevia to sweeten as desired
