This Kiwi & Watermelon smoothie is creamy yet refreshing and oh so good for you!

Watermelon is 92% water and contains only 46 calories per cup.  However, it is packed with vitamins like C and A, as well as disease-fighting phytonutrients including the carotenoid antioxidant lycopene.  In addition to giving watermelon its beautiful red colour, lycopene is believed to help reduce cholesterol and blood pressure as well as the risk of cancer, stroke, diabetes, and even osteoporosis.

For 3 servings, blend together until smooth:

  • 2 to 2.5 cups deseeded diced watermelon
  • 2 peeled kiwi
  • 1 cup canned organic coconut milk* 
  • 1 cup unsweetened coconut water
  • pure stevia, agave or maple syrup to sweeten as desired

*Notes:  For a lighter option, replace the coconut milk with a second cup of coconut water.  To make this into a green smoothie, add a couple handfuls of fresh baby spinach or kale.  If serving as a 'real meal deal', add 2 Tbsp per serving shelled hemp hearts (omit for gluten-free) or your choice of unflavoured collagen (paleo) or protein powder as directed.
