This is my go-to for a quick and refreshing green smoothie. It is also a great place to start for people who are new to healthy smoothies or don't see themselves as kale lovers. The pineapple adds amazing sweet-tart freshness that almost "masks" the taste of the kale (so feel free to add more greens!).
Along with its vibrant tropical flavour, pineapple brings loads of vitamins, minerals and antioxidants. It also contains a complex enzyme called bromelain. This protein-digesting compound is believed to have numerous health benefits, including anti-inflammatory, anti-cancer, and pro-digestive effects.
For one serving, blend together until smooth:
1 cup unsweetened almond or nut-free milk (I like to make homemade plant-based milk with my Almond Cow)
1 generous handful raw baby kale or spinach
1 cup frozen pineapple
1 Tbsp almond butter (or sunflower seed butter for a nut-free option)
