It doesn’t get much better than chocolate and peanut butter.

Bonus is, these tasty, easy-to-make overnight oats are packed with micronutrients (vitamins, minerals, antioxidants), fibre, healthy fats, and protein.  Above I also used a combination of almond milk and kefir for those gut-healthy probiotics and added some cauliflower rice for a morning veggie boost!

Chocolate Peanut Butter Proats can be enjoyed cold or heated up if you need a warm and cozy start to your day.

Ingredients per serving:

  • 1/3 cup old-fashioned rolled oats (gluten-free if needed)

  • 1 Tbsp Nuzest Clean Lean Rich Chocolate protein powder

  • 1 Tbsp Further Food chocolate collagen with reishi (omit for vegan)

  • 1 Tbsp Lakanto sugar-free peanut butter powder

  • 1/2 Tbsp chia seeds

  • 1/2 tsp Organika or Plant Burst maca powder (optional)

  • 1/2 tsp FreshCap Mushrooms Thrive 6 mushroom blend (optional)

  • 2/3 cup unsweetened almond milk (or use part dairy or dairy-free kefir)

  • 1/4 cup cauliflower rice (optional)

  • Lakanto sugar-free monk fruit sweetener or sweetener of choice, adjusted to taste

  • optional toppings: fresh or frozen berries, coconut chips (white chocolate and Rawcology dark chocolate coconut chips above), Giddy Yo cacao nibs, Fatso Salted Caramel peanut butter, or toppings of choice

Directions:

  1. Put oats, protein powder, collagen, peanut butter powder, chia seeds, maca, and mushroom blend in a bowl or mason jar and stir to combine.

  2. Add milk and cauliflower rice (if using) and mix well. Sweeten to taste.

  3. Cover and refrigerate overnight or for a minimum of 6 hours.

Serve chilled or heated with your choice of toppings. Chocolate Peanut Butter Proats can be stored in an airtight container in the fridge for 5 days.
