This protein-boosted Chocolate Almond Maca Chia Pudding defines nutritious-and-delicious! Better still, it is made the night before so all you need to do in the morning is add your favourite toppings!

Chia seeds have a mild nutty taste and are super healthy and versatile.  They are rich in fibre, minerals, protein, antioxidants, and healthy fats.

Maca (optional) is a great “superfood” booster and its slightly earthy, butterscotch taste blends well with chocolate.  In addition to providing extra vitamins and minerals, maca is recognized as a herbal "adaptogen".  This means it is believed to help the body to regulate cortisol levels and deal with stress.  Maca may help to relieve anxiety while also boosting energy, concentration, and even libido.

Ingredients for 4 servings:

  • 2 cups unsweetened almond milk (see note below*)

  • 1/4 cup Nuzest Clean Lean Rich Chocolate, Smooth Vanilla, or Just Natural protein powder

  • 1/4 cup raw almond butter (such as Artisana)

  • 2 to 4 Tbsp Giddy Yo raw cacao powder, adjusted to taste

  • 1 Tbsp maca powder (optional)

  • 1 tsp pure vanilla extract (or almond extract for a marzipan-like flavour)

  • 1/2 tsp ground Ceylon cinnamon (optional)

  • pinch of sea salt

  • Lakanto sugar-free monk fruit sweetener, pure stevia, or sweetener of choice, adjusted to taste

  • 1/2 cup chia seeds

  • optional toppings: berries, nuts and/or nut butter, Giddy Yo cacao nibs, Lakanto sugar-free chocolate bar or chips, unsweetened coconut chips, granola, hemp hearts, bee pollen, or toppings of choice

*Notes: I like to use unsweetened almond milk or a combination of almond milk and canned coconut milk. Increase milk to 2 1/4 cups if a thinner consistency is preferred.

Directions:

  1. Put the milk, protein powder, almond butter, cacao, maca, and vanilla into a blender container and blend until smooth. Sweeten to taste.

  2. Add chia seeds and pulse-blend until just combined (or blend fully if prefer smooth consistency).

  3. Pour into a bowl or single-serving mason jars and cover.

  4. Allow to sit for 10 minutes, then whisk or shake well. Cover and refrigerate overnight.

In the morning, stir and add additional sweetener or almond milk as needed for desired taste and consistency. Serve cold or warm with your choice of toppings.

Chocolate Almond Maca Chia Pudding can be stored in an airtight container in the fridge for up to 5 days.
