This jam tastes amazing, contains no refined sugar, is loaded with antioxidants, vitamins & minerals, fibre, protein and healthy fats, plus it's incredibly easy to make. Now how good is that?!?
Ingredients for approximately 1.5 cups jam:
2 cups fresh and/or frozen organic raspberries, blueberries, or mixed berries*
2 Tbsp water
2 to 4 Tbsp collagen peptides or Nuzest Clean Lean vanilla or natural vegan protein powder (optional)
1 tsp pure vanilla or almond extract, or a couple drops orange essential oils (optional)
Lakanto monk fruit sweetener, Swerve sugar-free sweetener, raw honey, or sweetener of choice, adjusted to taste (optional)
2 Tbsp white chia seeds
Put berries and water in a pot over medium heat and cook until they start to break down and become syrupy, approximately 8 minutes.
Using a wooden spoon or potato masher, mash the fruit to desired texture.
Remove from heat and stir in collagen and/or protein, extract or essential oils if using, and sweetener to taste. Add chia seeds and stir until well combined.
Let stand 10 minutes or until thickened.
Enjoy now or transfer jam to a jar, cover, and refrigerate. It will thicken further as it chills.
Chia jam can be stored in an airtight container in the fridge for 2 weeks or frozen for up to 2 months.
*Note: This also works well with 1 1/2 cups of frozen raspberries plus 1/2 cup of frozen riced cauliflower!
