LEMON CREAM PIE PUDDING

This 3-ingredient make-ahead chia pudding is thick and creamy and super satisfying, with a wonderful burst of freshness from the lemon.  Bonus is, it comes together in just a couple minutes and is packed with probiotics, fibre, healthy fats, and protein to start your day off right!

Ingredients for 4 servings:

  • 2 cups unsweetened milk of choice (see note below)

  • 2 cups lemon skyr or Greek yogurt (see note below)

  • 1/2 cup chia seeds

*Canned coconut milk works well for extra-creamy chia pudding. For a higher protein breakfast, opt for Fairlife or unsweetened soy milk. If lemon skyr is unavailable, substitute plain skyr or Greek yogurt and add lemon juice, zest and/or extract and sweetener of choice to taste.

Optional add-ins:

  • 1 teaspoon pure vanilla extract 

  • 2 to 3 tsp lemon zest, adjusted to taste

  • 1/4 cup sugar-free maple monk fruit sweetener or sweetener of choice, adjusted to taste

  • plain or vanilla protein powder (up to 1 scoop per serving but adjust liquid as needed)

  • pinch of sea salt

Directions:

  1. In a medium bowl, whisk together milk, yogurt, chia seeds, and optional add-ins.

  2. Allow to sit for 10 minutes, then whisk again.  Cover and refrigerate overnight.

In the morning, stir and add additional sweetener or milk as needed for desired taste and consistency.  Serve cold with your choice of toppings.
