FLUFFY VEGAN BUCKWHEAT PANCAKES

These buckwheat pancakes are thick, fluffy, delicious, and oh so satisfying. Better still, they’re vegan-friendly, gluten-free, and super easy to make.

Ingredients for 6 large pancakes:

  • 1 cup all-purpose gluten-free flour

  • 1/2 cup buckwheat flour

  • 1 Tbsp baking powder 

  • 1 Tbsp coconut sugar or Lakanto Golden sugar-free monkfruit sweetener

  • 2 tsp Homemade Chai Spice Mix (recipe below)

  • 1/8 tsp sea salt

  • 1 1/2 cup unsweetened almond milk or nut-free milk (I like to use my Almond Cow to make homemade plant-based milk)

  • 1/4 cup water

  • 2 Tbsp avocado oil

  • 1 tsp pure vanilla extract

  • optional toppings: Sautéed Chai Apple (see below), pecan butter, homemade granola, homemade Spiced Candied Nuts, pure maple syrup, or toppings of choice

Directions:

  1. In a large bowl, mix together all-purpose gluten-free flour, buckwheat flour, baking powder, coconut sugar or sweetener, chai spice, and salt.

  2. In a separate small bowl, whisk together almond or nut-free milk, water, avocado oil, and vanilla extract.

  3. Add wet ingredients to dry and stir until just combined.  Allow batter to rest for 5 min.

  4. Lightly oil a large nonstick skillet or griddle over medium heat.  Drop batter by large spoonfuls onto the prepared pan.

  5. Cook until bubbles form and the edges are dry.  Flip, and cook until golden brown on the other side. Serve warm with your choice of toppings.

Homemade Chai Spice Mix

This makes just under 3 Tbsp of chai spice. Two teaspoons are needed for the pancakes and the rest can be reserved for future use (Tahini Chai Granola, oats, smoothies, chia pudding, etc.).

Ingredients:

  • 4 tsp ground cinnamon

  • 2 tsp ground ginger

  • 1 tsp ground cardamom

  • 1/2 tsp nutmeg

  • 1/2 tsp cloves

  • 1/2 tsp allspice

Directions:

  1. Mix all the ingredients together and transfer to an airtight container such as a mason jar.

Homemade Chai Spice Mix can be stored in a cool, dry place for 3 to 4 months.


Sautéed Chai Apples

Ingredients:

  • 1 apple, cored and diced

  • 1 to 2 tsp coconut oil

  • 1/2 tsp chai spice⠀⠀

Directions:

  1. In a small cast-iron skillet, melt coconut oil over medium-high heat. Add apples and cook, stirring frequently, until apples are almost tender, about 6 to 7 minutes.

  2. Add chai spice, stirring constantly for another minute or two. Remove from heat and serve warm on top of pancakes.
