CHOCOLATE OVERNIGHT PROTEIN "ZOATS"

I am a big fan of overnight oats.  I am also a big fan of getting in some veggies at brekkie.  So zucchini oats or “zoats” are win win in my books. Especially when they’re packed with chocolatey goodness along with loads of antioxidants, fibre, healthy fats, protein, pre and probiotics, and adaptogens, too!

Ingredients for 2 servings:

  • 2/3 cup gluten-free old-fashioned rolled oats

  • 2 scoops Nuzest Clean Lean Rich Chocolate protein powder

  • 2 Tbsp chia seeds

  • 2 Tbsp Organika Maca & Cacao Powder (or use 1 1/2 Tbsp Giddy Yo cacao plus 2 tsp Plant Burst maca powder)

  • 2 Tbsp powdered almond butter

  • 1 tsp FreshCap Mushrooms reishi, chaga, or Thrive 6 mushroom powder blend (optional)

  • 1 cup packed grated zucchini, with some of moisture squeezed out

  • 1 cup unsweetened almond milk (I like to use my Almond Cow to make homemade plant-based milk)

  • 1/4 cup plain probiotic coconut yogurt (or substitute Greek yogurt)

  • 1 tsp pure vanilla extract

  • optional Lakanto sugar-free monkfruit sweetener or sweetener of choice, adjusted to taste

  • optional toppings: fresh berries, tigernuts, trail mix or granola, cacao nibs or chocolate chips (Lily’s Sweets sugar-free chips used here), nut butter

Directions:

  1. In a bowl or single serving mason jar(s), mix together oats, protein powder, chia seeds, maca & cacao, powdered almond butter, and mushrooms (if using).

  2. Add zucchini, almond milk, yogurt, and vanilla extract and stir well to combine. Sweeten to taste.

  3. Cover and refrigerate overnight, or for a minimum of 6 hours.

Chocolate Overnight Protein Zoats can be stored in an airtight container in the fridge for 4 to 5 days. Serve with your choice of toppings.
