CHIA SEED JAM

This jam tastes amazing, contains no added sugar, is loaded with antioxidants, vitamins & minerals, fibre, protein and healthy fats, plus it's incredibly easy to make.  Now how good is that?!?

Ingredients for approximately 1 1/2 cups jam:

  • 2 cups fresh and/or frozen organic raspberries, blueberries, strawberries, or mixed berries

  • 2 Tbsp water

  • 1 to 2 Tbsp Further Food Collagen Peptides or Nuzest Clean Lean Smooth Vanilla or Natural vegan protein powder (optional)

  • 1 tsp pure vanilla or almond extract, or a couple drops orange essential oils (optional)

  • Lakanto or ZenSweet sugar-free monk fruit sweetener, raw honey (non-vegan), maple syrup, or sweetener of choice, adjusted to taste (optional)

  • 2 Tbsp chia seeds

Toasted gluten-free chia bread (darker colour) with plain yogurt, strawberry chia jam, grain-free granola, and bee pollen.

Grain-free, keto-friendly toast topped with (1) plain Greek yogurt, homemade strawberry chia seed jam, and peanut butter, and (2) raw almond butter, chia jam, grain-free granola, and Lakanto sugar-free chocolate pieces.

Directions:

  1. Put berries and water in a pot over medium heat and cook until they start to break down and become syrupy, approximately 8 minutes.

  2. Using a wooden spoon or potato masher, mash the fruit to desired consistency.

  3. Remove from heat and stir in collagen and/or protein, extract, or essential oils if using. Sweeten to taste.

  4. Add chia seeds and stir until well combined. Let stand 10 minutes or until thickened.

  5. Enjoy now or transfer to a jar and cover and refrigerate. Jam will thicken further as it chills.

Chia Seed Jam can be stored in an airtight container in the fridge for 2 weeks or frozen for up to 2 months.
