The best brussels sprouts ever.  Tender and delicious with those wonderful crispy bits...

Lol I swear I'd buy an air fryer just for brussels sprouts.  However, if you're not convinced, they roast up real nice in the oven, too! Check out my roasted Buffalo Brussels recipe here!

Brussels sprouts are incredibly nutrient-dense since they are low in calories but packed with vitamins and minerals (especially C & K), fibre, and disease-fighting antioxidants.  They are also one of the best plant sources of ALA omega-3 fatty acids.  Some of the antioxidants in brussels sprouts, such as kaempferol, have been shown to reduce inflammation and help stabilize blood sugar, and may even reduce the risk of cancer.

Ingredients:

  • 1 lb brussels sprouts, trimmed and cut in half (quarters if large)

  • 1 Tbsp extra virgin olive oil

  • seasoning salt or 1/4 tsp sea salt plus 1/8 tsp black pepper, or seasonings of choice, adjusted to taste

  • optional grated Parmesan or nutritional yeast for serving

Directions:

  1. Preheat air fryer to 400ºF.

  2. Toss brussels with olive oil and seasoning to coat evenly.

  3. Place brussels in the air fryer basket in a single layer. Do multiple batches if needed.

  4. Air fry for 10 minutes (or until desired level of doneness), shaking halfway through.

Serve with grated Parmesan or nutritional yeast as desired.
