Homemade popsicles make the perfect nutritious-and-delicious snack on a hot summer day.  And here I added a red, white and blue twist for the American Independence Day celebrations!

These popsicles are super easy to make, refined sugar free, and packed with healthy fats, protein, and probiotics.  The recipe be modified to suit vegan, paleo, and keto diets.

Ingredients

  • 2 cups fresh strawberries 

  • 2-3 tsp Salus Red Beet Crystals (optional)

  • 2 cups plain higher-fat probiotic Greek or coconut yogurt, divided (I used 8% Greek yogurt)

  • 1 tsp pure vanilla extract

  • 1 scoop E3live Blue Majik blue spirulina powder

  • Lakanto sugar-free Powdered monk fruit sweetener or sweetener of choice, adjusted to taste

Directions:

  1. Add strawberries and red beet crystals to a blender container and blend on high.  Sweeten to taste. 

  2. In a small bowl, whisk together 1 cup yogurt, vanilla extract, and sweetener to taste. If the yogurt mixture is too thick for adding to the popsicles molds, stir in 1-2 Tbsp non-dairy milk.

  3. In a separate bowl, whisk together remaining 1 cup yogurt, blue spirulina powder, and sweetener to taste. Stir in 1-2 Tbsp non-dairy milk if needed as above.

  4. Fill each popsicle mold with the 3 mixtures, alternating red, white and blue layers.  Tap each mold to make sure the layers settle, and insert the popsicle sticks.

  5. Freeze for a minimum of 6 hours or overnight.
