PEACHES & CREAM PANNA COTTA

Made with just a few ingredients including gelatin, this nutritious-and-delicious no-bake dessert has a lovely peach flavour and a unique texture reminiscent of panna cotta — or a cross between jello and pudding.

For anyone unfamiliar with gelatin, it’s a water-soluble protein derived from collagen.  It is nearly colourless and tasteless and works well as a gelling agent.  You can read more about it in my article on the gut microbiome and gut-brain-axis, but collagen is believed to have numerous benefits in terms of skin, bone/joint, and digestive health.  

Intrigued?!?  Well, the good news is, this recipe is crazy easy to make and packed with fiber, healthy fats, protein and adaptogens, too!  Truthfully, it’s a tasty dessert that is healthy enough to eat for brekkie...

Recipe for Peach "Panna Cotta"

Ingredients for 4 servings:

  • 2 cups organic peaches

  • 1 can (1 1/2 cups) organic full-fat coconut milk

  • 1 Tbsp Plant Burst or Organika maca powder (optional)

  • Lakanto sugar-free monk fruit sweetener, raw honey, stevia, or sweetener of choice, adjusted to taste (optional)

  • 2 Tbsp Further Food gelatin powder

  • optional toppings: vanilla coconut whipped cream (see recipe below) & fresh partly puréed peaches (here), or blueberries, coconut chips, cacao nibs, or toppings of choice

Directions:

  1. Put peaches, coconut milk, and maca in a blender container and blend until smooth. Sweeten to taste.

  2. Add gelatin and blend until mixed.

  3. Divide into bowls or ramekins and chill overnight.

Serve chilled with your favourite toppings. Peaches & Cream Panna Cotta can be stored in an airtight container in the fridge for 4 to 5 days.

Vanilla Coconut Whipped Cream

This recipe requires coconut cream.  If coconut cream is not available, you can use the solidified cream from the top of refrigerated full-fat coconut milk.  The liquid can be reserved and used later (perhaps in a tasty smoothie!).  Two cans may be required.

Ingredients:

  • 1 cup well-chilled coconut cream

  • 1 tsp pure vanilla extract

  • Lakanto monk fruit sweetener, pure stevia, or sweetener of choice, adjusted to taste

Directions:

Put the cold coconut cream and vanilla into a bowl.  Beat until smooth and sweeten to taste.  Use immediately or refrigerate until ready to use.
