There are few breakfasts as simple and satisfying as overnight protein oats or “proats”. You simply mix the ingredients together in a matter of minutes the night before, and they soak while you sleep.  In the morning, they're ready whenever you are!

This blueberry & maca version is one of my favourites.  It tastes great and is absolutely packed with all the goods — vitamins & minerals, antioxidants, fibre, healthy fats, protein, and adaptogens, too!  What a great way to start the day!

Bring on the Blue

Blueberries are bursting with flavour and nutrition.  They are packed with amazing phytonutrients, vitamins, minerals, and fibre.

Blueberries get their deep blue hue from anthocyanins, which are powerful antioxidants.  In fact, blueberries contain among the highest antioxidant capacities of all the commonly consumed fruits and vegetables.  These natural disease-fighting agents are believed to help in the prevention of cancer, diabetes, heart disease and even cognitive impairment!

In the Mood for Maca (optional)

Maca is a great superfood booster and its slightly earthy, butterscotch taste blends well with blueberry.  In addition to providing extra vitamins and minerals, maca is recognized as a herbal "adaptogen".  This means it helps the body to regulate cortisol levels and deal with stress.  And I used that expression for a reason!  Maca may actually help to relieve anxiety while boosting mood, energy, concentration, and even libido.

Recipe for Blueberry Maca Overnight Protein Oats

Ingredients for 2 large or 4 small servings:

  • 1 cup gluten-free old-fashioned rolled oats

  • 2 to 4 Tbsp Nuzest Clean Lean Smooth Vanilla or Just Natural protein powder OR Further Food Collagen Peptides OR a combination

  • 2 Tbsp white chia seeds

  • 2 tsp Plant Burst maca powder (optional)

  • 1 tsp ground cinnamon

  • 1 cup unsweetened almond or nut-free milk

  • 1 cup canned organic full-fat coconut milk

  • 1 cup frozen unsweetened blueberries

  • Lakanto sugar-free Monk fruit Sweetener, pure stevia, or sweetener of choice, adjusted to taste

  • optional toppings: fresh fruit and/or warm blueberry compote (frozen berries heated up), coconut chips, quinoa clusters or granola, nuts, seeds, cacao nibs, or toppings of choice

Directions:

I usually double this recipe and prep a big batch of these hearty oats for my family of 5.  However, they can also be made in single-serving mason jars to grab-and-go.

  1. Put oats, protein powder and/or collagen, chia seeds, maca, and cinnamon in a bowl or single-serving mason jar(s) and stir to combine.

  2. Add almond milk and coconut milk and mix well. Fold in blueberries and sweeten to taste.

  3. Cover and refrigerate overnight or for a minimum of 6 hours.

  4. In the morning, stir and serve chilled or heat if desired. Add toppings and enjoy!

Blueberry Maca Overnight Protein Oats can be stored in an airtight container in the fridge for up to 5 days.
