KALE IS KING SMOOTHIE

KALE GRAPE BANANA PROTEIN SMOOTHIE.jpg

This kale, grape & banana smoothie is super simple, super delicious and super nutritious! It’s a great introduction to green smoothies for kids (or even grown-up kids!) who think they don’t like rabbit food!

Kale is one of the most nutrient-dense foods on the planet.  For only 33 calories per cup, you get loads of amazing goodness: 2.5 grams of fibre, a wealth of vitamins and minerals, disease-fighting antioxidants, and even 3 grams of protein!

In fact, one cup of kale contains more vitamin C than an orange and is one of the world’s best sources of vitamin K with almost seven times the recommended daily intake!

Kale is high in lutein and zeaxanthin, carotenoid antioxidants that are very important for eye health (they reduce the risk of cataracts and macular degeneration). It also contains substances that may reduce cholesterol and lower the risk of several cancers.

For 2 servings, blend together until smooth:

  • 1 1/2 cups unsweetened almond or nut-free milk (I like to use my Almond Cow to make plant-based milk)

  • 2 large handfuls baby kale

  • 1 cup frozen green grapes

  • 1/2 to 1 frozen banana

For a more substantial snack or "full meal deal", I always add healthy fats and protein.  Good options here include:

  • 2 Tbsp Nuzest Clean Lean Smooth Vanilla or Just Natural protein powder (used here) OR 2 Tbsp Further Food collagen peptides (non-vegan), OR 1/2 cup Greek yogurt (non-vegan) PLUS

  • 1/2 ripe avocado or 2 Tbsp almond butter
