I absolutely love sweet potatoes! They are super delicious, nutritious and extremely versatile. Here sweet potato is blended with dates, nuts, seeds and spices to make a healthy smoothie that tastes rich & decadent like pumpkin pie!
For 2 servings, blend together until smooth:
2 cups unsweetened almond milk
1 cup cooked chilled sweet potato (or substitute unsweetened pumpkin purée)
3 standard ice cubes (optional)
1/4 cup raw pecans and/or 2 Tbsp pumpkin seed butter
1 to 2 pitted Medjool dates
2 Tbsp chia seeds
1/2 tsp pure vanilla extract
1/4 tsp ground turmeric
1/8 tsp ground cinnamon
1/8 tsp ground ginger
a pinch each of cardamom, nutmeg, and black pepper
To make this into a 'real meal deal', add 2 Tbsp protein powder or collagen peptides and/or 1/2 cup plain Greek yogurt and/or shelled hemp seeds (2 Tbsp per serving).
