What is Kefir?
Kefir is a fermented drink made from milk (dairy or nondairy, including soy, rice and coconut) or water. This unique probiotic powerhouse has a yogurt-like taste and lots of immune-boosting and disease-fighting benefits. It contains bioactive compounds that can improve gut & skin health, and may even help reduce the risk of cancer & allergy symptoms. One compound found only in kefir, known as kefiran, has been found to fight against candida, a common yeast infection. Strawberries & Cream Overnight Proats Recipe
Ingredients for 2 servings:
2/3 cup gluten-free rolled oats
2 Tbsp white chia seeds
2 Tbsp gluten-free shelled hemp hearts
2 tsp gelatinized maca powder (optional)
1 cup frozen strawberries
1/2 cup canned organic full-fat coconut milk
3 Tbsp almond butter (optional or use sunflower seed butter for nut-free option)
2 tsp beetroot crystals (optional)
1/2 to 1 tsp pure vanilla extract
Lakanto monkfruit sweetener, stevia, raw honey (nonvegan), or sweetener of choice, adjusted to taste
optional toppings: fresh or dried fruit, bee pollen, coconut chips, cacao nibs, granola, nuts/nut butter, or toppings of choice
Combine oats, chia, hemp seeds and maca in a medium bowl.
Put strawberries, kefir or yogurt, coconut milk, almond butter, beetroot crystals, and vanilla extract into blender container and blend well. Sweeten as desired.
Pour strawberry "smoothie" over the oat and seed mixture and stir to combine.
Cover and refrigerate overnight (or for a minimum of 6 hours).
In the morning, stir and serve with your favourite toppings.
Strawberries & Cream Overnight Proats can be stored in an airtight container in the fridge for 4 to 5 days.
