Get your glow on with this creamy, collagen-enriched no-fruit green smoothie. It is a tasty low-carb option that is packed with veggies, fibre, healthy fats, protein, and disease-fighting antioxidants.
Side Note: If you like a sweeter fruity smoothie, you can certainly add frozen banana (as I do for my 3 chicklets!). However, this is one of my favourite fruit-free combos.
The Collagen Healthy Skin Glow
Collagen is a natural protein found predominantly in skin, bones, joints and ligaments as well as the digestive tract. Unfortunately, as we age, our bodies produce less and lower-quality collagen. This contributes to the wrinkles, joint problems and reduction in bone density and metabolism that many of us have already started to experience! Adequate collagen is also necessary to balance the gut microbiome and maintain a healthy digestive tract.
To help our bodies make collagen, we must first ensure an adequate intake of the amino acid building blocks. Good food sources include grass-fed gelatin, bone broth, eggs, and white fish such as cod. Vegans can get the necessary amino acids from plant-based foods such as legumes (including peanuts), soy, brewer’s or nutritional yeast, and spirulina. Unfortunately, our diets don't always provide enough of these amino acids. The good news, though, is that there are a number of oral collagen supplements available, such as the one used here. More research is needed, but studies indicate that regular consumption of collagen peptides can help reduce the visible signs of skin aging and improve joint and arthritis symptoms.

Cauliflower is a super nutrient-dense cruciferous vegetable. It is low in calories and carbs but rich in vitamins & minerals, fibre, and disease-fighting glucosinolates, phenols and other powerful phytochemical. Because of its low-cal, high fibre status, cauliflower is great for constipation and healthy weight control. It also contains compounds that help to balance hormones and support liver function.
Cruciferous vegetables — a family that also includes broccoli, kale and brussel sprouts — have been getting a lot of attention of late. Studies suggest that these nutritional powerhouses may have a role in preventing chronic illnesses such as cardiovascular disease, diabetes, Alzheimer's, and even certain cancers.
Steamed-then-frozen cauliflower is a smoothie game changer. It adds a wonderful creaminess but very little taste, so is a great way to get in some extra veg!
What is Chlorella?
Chlorella is a blue-green freshwater algae that has been ranked among the healthiest foods on the planet. More research is needed but it has been suggested that chlorella can boost energy and metabolism; support the immune system and liver detoxification; improve skin, oral, gastrointestinal and cardiovascular health; and reduce the risk of certain cancers.
Mint Chip Glow Smoothie Recipe
Ingredients for one serving:
3/4 cup unsweetened almond or nut-free milk (I like to use my Almond Cow to make homemade plant-based milk)
generous handful baby spinach
1 cup steamed-then-frozen cauliflower
1 Tbsp Further Food collagen peptides
2 tsp MCT oil (optional)
1/4 tsp chlorella powder (optional)
1/8 tsp pure peppermint extract or a small handful of fresh mint leaves
optional Lakanto monkfruit sweetener, pure stevia, raw honey, or 1/2 to 1 frozen banana, adjusted to taste
1 Tbsp raw cacao nibs
optional toppings: warm cashew butter (mixed with MCT oil here), additional cacao nibs, or toppings of choice
Put almond milk, spinach, cauliflower, collagen, MCT oil, chlorella, and peppermint extract into a blender container and blend until smooth. Add sweetener of choice to taste.
Add 1 Tbsp cacao nibs and pulse-blend to mix but maintain crunch.
Serve with your favourite toppings & enjoy!
