Lychees are amazing little round or heart-shaped fruits.  They are native to southern China where they are felt to be a symbol of love and romance.  Here they combine with coconut and cherries to make a healthy tropical treat. 

Inside the leathery red skin, the fruit is translucent, white and juicy.  Lychees have a delightful floral fragrance and sweet taste, with notes of cherry and grape.  They are loaded with vitamins, minerals, fibre and antioxidants, and are particularly rich in rutin, a bioflavonoid polyphenol recognized for strengthening blood vessels.

For 2 servings, blend together until smooth:

  • 1 cup unsweetened coconut water

  • 1 cup peeled and pitted lychee fruit

  • 1 cup frozen cherries

  • 1/2 cup canned organic full-fat coconut milk

  • 1/2 tsp pure vanilla extract (optional)

  • optional Lakanto monkfruit sweetener, pure stevia, or raw honey (nonvegan), adjusted to taste

To make this into a 'Real Meal Deal' with some additional fibre, healthy fats, antioxidant and protein power, add:

  • 2 Tbsp chia seeds
