This recipe combines chia seeds, blueberries, and natural peanut butter (sunflower seed butter for nut-free and paleo) for a truly brilliant breakfast bowl!

Blueberries are delicious little nutritional powerhouses.  They contain among the highest antioxidant capacities of all fruits and vegetables.

Chia seeds have a mild nutty taste and are extremely nutrient-dense.  They are rich in minerals, antioxidants, protein, healthy fats, and fibre.  In fact, a 2 Tbsp serving contains 4 grams of protein and 12 grams of carb, of which 11 grams are actually fibre!

Ingredients for 3 servings:

  • 2 cups unsweetened almond or nut-free milk

  • 1 to 1 1/2 cups fresh blueberries

  • 3 Tbsp natural peanut butter (or substitute sunbutter for nut-free and paleo)

  • 1 tsp pure vanilla extract (optional)

  • Lakanto monkfruit sweetener, pure stevia, raw honey (nonvegan), or sweetener of choice, adjusted to taste

  • 6 Tbsp chia seeds

  • optional toppings: peanuts/nuts, fresh berries, or toppings of choice


  1. Put almond milk, blueberries, peanut butter, and vanilla into a blender container and blend well. Sweeten to taste.

  2. Add chia seeds and pulse-blend until just combined.

  3. Pour into a bowl or single-serving mason jars and allow to sit for 10 minutes. Whisk or cover and shake and then refrigerate overnight or for a minimum of 4 hours until a pudding-like consistency achieved.

Blue Brilliance Chia Pudding can be stored in an airtight container in the fridge for up to 5 days. Serve with your favourite toppings.
